Ingredients
  

  • 4 halibut fillets 6 oz each
  • 2 tbsp olive oil
  • 1 tbsp butter
  • Salt to taste
  • Black pepper to taste
  • 1 lemon sliced
  • Fresh herbs parsley or dill for garnish

Instructions
 

Pat halibut dry

  • Use paper towels to remove moisture from fillets. This helps get a golden, crispy crust when cooking.

Season the fish

  • Sprinkle salt and black pepper evenly on both sides of the halibut fillets.

Heat the pan

  • Place a non-stick skillet over medium-high heat. Add olive oil and butter until melted and hot.

Sear the fillets

  • Place halibut in the pan. Cook for 3–4 minutes on one side without moving.

Flip carefully

  • Use a spatula to flip fillets gently. Cook another 3–4 minutes until fish is opaque and flakes easily.

Rest the fillets

  • Remove fish from pan. Place on a plate and let rest for 2 minutes to keep it moist.

Add lemon and herbs

  • Squeeze fresh lemon over the fish. Garnish with parsley or dill for extra flavor. Serve warm.

  • Pat fish dry for a crispy crust.
  • Do not overcrowd the pan; cook in batches if needed.
  • Use medium-high heat for golden color without burning.
