Ingredients
  

  • 6 pre-made or homemade pancakes
  • 1 pound breakfast sausage cooked and crumbled
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder optional
  • 1/2 teaspoon paprika optional

Instructions
 

Preheat Oven

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish lightly with butter.

Cook Sausage

  • Cook sausage in a frying pan over medium heat until browned. Crumble and set aside.

Layer Pancakes

  • Place half of the pancakes in the bottom of the baking dish. Break them slightly to fit evenly.

Add Sausage

  • Sprinkle half of the cooked sausage evenly over the pancakes in the dish.

Add Cheese

  • Sprinkle half of the cheddar cheese over the sausage layer evenly.

Layer Pancakes Again

  • Place remaining pancakes on top of sausage and cheese. Break slightly if needed for even layering.

Add Remaining Sausage

  • Sprinkle the rest of the cooked sausage on top of the pancake layer evenly.

Mix Egg Mixture

  • In a bowl, whisk together eggs, milk, salt, pepper, garlic powder and paprika until smooth.

Pour Egg Mixture

  • Pour egg mixture evenly over the layered pancakes and sausage in the dish.

Add Remaining Cheese

  • Sprinkle remaining cheddar cheese on top. Spread evenly to cover the egg mixture.

Bake Casserole

  • Bake in preheated oven for 30–35 minutes until eggs are set and cheese is melted and golden.

Cool and Serve

  • Let the casserole cool for 5 minutes. Slice into squares and serve warm with syrup or hot sauce.

Notes

  • Use cooked sausage to avoid raw meat in the casserole.
  • Pre-made pancakes save time, but homemade pancakes taste best.
  • Low heat in the oven ensures eggs cook evenly.
