Ingredients

  • 12 oz chow mein noodles or thin egg noodles
  • 2 tablespoons vegetable oil
  • 1 cup shredded cabbage
  • 1 cup sliced green cabbage or coleslaw mix
  • 1 small onion thinly sliced
  • 1 cup celery sliced
  • 3 cloves garlic minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • ΒΌ teaspoon black pepper
  • Salt to taste

Instructions

Cook the noodles

  • Boil noodles in salted water until tender yet firm. Drain them well and set aside so they do not become sticky.

Prepare the vegetables

  • Slice celery, cabbage and onion into thin strips for quick cooking. Keep garlic minced and ready in a small bowl near stove.

Heat the oil

  • Place a large wok or skillet on medium heat. Add vegetable oil and let it warm until lightly shimmering and ready for frying.

Stir fry the vegetables

  • Add onion, cabbage and celery to hot pan. Stir often so vegetables soften slightly yet still keep a fresh crunchy bite.

Add garlic for flavor

  • Add minced garlic and cook briefly while stirring. Do not burn garlic. It should smell fragrant and lightly golden before sauces.

Mix the sauce

  • In a bowl combine soy, oyster, hoisin, sugar, sesame oil and pepper. Stir well so sauce becomes smooth and fully blended.

Add noodles to pan

  • Place cooked noodles into vegetables in pan. Toss gently with tongs so noodles spread evenly without breaking or clumping.

Pour sauce over noodles

  • Pour prepared sauce over noodle mixture. Toss again so every strand gets coated. Cook until sauce slightly thickens and shines.

Taste and adjust

  • Taste noodles and adjust salt or pepper if needed. Let everything cook one extra minute so flavors blend fully together.

Serve warm

  • Turn off heat and plate noodles while hot. Enjoy your homemade Panda Express Chow Mein with family or friends happily.

Notes

  • Do not overcook noodles or they become mushy
  • Use a large pan for easy tossing
  • Precut everything before cooking
  • Add chicken or shrimp for protein
  • Use low sodium soy sauce to control salt
  • Stir often to avoid burning garlic
  • Coleslaw mix saves time for chopping
