Ingredients
  

  • 500 g fresh fish filets
  • 200 g shrimp
  • 200 g mussels
  • 200 g squid
  • 4 cups fish stock
  • 2 tablespoons olive oil
  • 1 onion finely chopped
  • 4 garlic cloves minced
  • 2 tomatoes chopped
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste
  • 1 bay leaf
  • 1/4 cup white wine
  • 1/4 cup fresh cilantro chopped
  • 1 lime cut into wedges

Instructions
 

Step 1. Clean and Cut Seafood:

  • Cut fish filets into chunks.
  • Peel and devein shrimp.
  • Clean and debeard mussels.
  • Clean and cut squid into rings.

Step 2. Heat Olive Oil:

  • Warm up 2 tablespoons of olive oil in a spacious pot over medium heat.

Step 3. Sauté Vegetables:

  • Toss in one finely diced onion into the pot.
  • Cook until softened, about 3-4 minutes.
  • Add 4 minced garlic cloves.
  • Sauté for another 1-2 minutes.

Step 4. Add Peppers and Tomatoes:

  • Add 1 chopped red bell pepper and 1 chopped yellow bell pepper to the pot.
  • Let them simmer until they begin to soften, approximately 5 minutes.
  • Add 2 chopped tomatoes.
  • Mix and simmer until the tomatoes soften completely, around 3 minutes.

Step 5. Add Spices:

  • Add 1 teaspoon of paprika, 1 teaspoon of ground cumin, and 1 teaspoon of oregano to the pot.
  • Stir well to combine.

Step 6. Pour in Fish Stock and Wine:

  • Add 4 cups of fish stock and 1/4 cup of white wine to the pot.
  • Add 1 bay leaf.
  • Season with a pinch of salt and a sprinkle of black pepper as per your preference.
  • Bring the concoction to a soft boil, then reduce the flame to a gentle simmer.

Step 7. Simmer the Broth:

  • Allow the broth to simmer for roughly 10 minutes, letting the flavors mingle harmoniously.

Step 8. Add Seafood:

  • Add the fish chunks, shrimp, mussels, and squid to the pot.
  • Stir gently to combine.

Step 9. Cook Seafood:

  • Simmer until the seafood is cooked through and the mussels have opened, about 5-7 minutes.
  • Step 10. Add Fresh Herbs:
  • Stir in 1/4 cup of chopped fresh cilantro.

Step 11. Serve:

  • Remove the bay leaf.
  • Ladle the soup into serving bowls.
  • Garnish with lime wedges on the side for squeezing over the soup.
