- 500 g fresh fish filets
- 200 g shrimp
- 200 g mussels
- 200 g squid
- 4 cups fish stock
- 2 tablespoons olive oil
- 1 onion finely chopped
- 4 garlic cloves minced
- 2 tomatoes chopped
- 1 red bell pepper chopped
- 1 yellow bell pepper chopped
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1 teaspoon ground cumin
- Salt and black pepper to taste
- 1 bay leaf
- 1/4 cup white wine
- 1/4 cup fresh cilantro chopped
- 1 lime cut into wedges
Step 1. Clean and Cut Seafood:
Cut fish filets into chunks.
Peel and devein shrimp.
Clean and debeard mussels.
Clean and cut squid into rings.
Step 3. Sauté Vegetables:
Toss in one finely diced onion into the pot.
Cook until softened, about 3-4 minutes.
Add 4 minced garlic cloves.
Sauté for another 1-2 minutes.
Step 4. Add Peppers and Tomatoes:
Add 1 chopped red bell pepper and 1 chopped yellow bell pepper to the pot.
Let them simmer until they begin to soften, approximately 5 minutes.
Add 2 chopped tomatoes.
Mix and simmer until the tomatoes soften completely, around 3 minutes.
Step 6. Pour in Fish Stock and Wine:
Add 4 cups of fish stock and 1/4 cup of white wine to the pot.
Add 1 bay leaf.
Season with a pinch of salt and a sprinkle of black pepper as per your preference.
Bring the concoction to a soft boil, then reduce the flame to a gentle simmer.
