Ingredients
  

  • 1 pound Italian sausage mild or spicy, casing removed
  • 1 medium onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 6 cups chicken or vegetable broth
  • 1 cup ditalini pasta
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon red pepper flakes optional
  • Salt and black pepper to taste
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cups fresh spinach or kale optional

Instructions
 

Cook the Sausage

  • Heat olive oil in a large pot. Add sausage and cook until browned, breaking it into small pieces.

Sauté Vegetables

  • Add onion, carrots and celery to the pot. Cook until vegetables soften, about five minutes, stirring occasionally.

Add Garlic

  • Stir in minced garlic. Cook for one minute until fragrant, being careful not to burn.

Add Broth and Herbs

  • Pour in chicken broth. Add Italian herbs, red pepper flakes, salt and pepper. Stir well to combine.

Simmer the Soup

  • Bring soup to a boil, then reduce heat. Simmer for 10 minutes to allow flavors to blend.

Cook Pasta

  • Add ditalini pasta to the simmering soup. Cook until pasta is tender, about eight minutes.

Add Greens

  • If using spinach or kale, stir it into the soup until wilted, about two minutes.

Stir in Parmesan

  • Add grated Parmesan cheese. Stir until melted and soup becomes creamy. Taste and adjust seasoning.

Serve Hot

  • Ladle soup into bowls. Sprinkle extra Parmesan on top if desired. Serve immediately with warm bread.
