Ingredients

  • 3 ripe bananas mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter melted
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1/2 cup chopped pecans
  • 1/2 teaspoon cinnamon

Instructions

Prepare the Oven

  • Preheat the oven to 350 degrees Fahrenheit. Grease a loaf pan lightly with butter or cooking spray to prevent the bread from sticking.

Mash the Bananas

  • Place ripe bananas into a large bowl. Mash them well with a fork until smooth and creamy with very small banana pieces remaining.

Mix the Dry Ingredients

  • In another bowl, combine flour, baking soda, salt and cinnamon. Stir everything together gently so the ingredients spread evenly throughout the flour mixture.

Combine Wet Ingredients

  • Add melted butter, brown sugar, eggs, vanilla extract and milk into the mashed bananas. Whisk well until the mixture becomes smooth and creamy.

Add the Dry Ingredients

  • Slowly add the flour mixture into the banana mixture. Stir gently using a spatula until combined. Do not overmix because the bread may become dense.

Fold in the Pecans

  • Add chopped pecans into the batter carefully. Fold them gently through the mixture so they spread evenly inside the banana bread batter.

Pour Batter into Pan

  • Transfer the batter into the prepared loaf pan. Smooth the top with a spatula so the bread bakes evenly in the oven.

Bake the Banana Bread

  • Place the loaf pan into the oven. Bake for about 60 minutes until the top becomes golden and a toothpick comes out clean.

Cool Before Slicing

  • Remove the bread from the oven carefully. Let it cool inside the pan for ten minutes before placing it onto a cooling rack.

Notes

  • Use very ripe bananas for sweeter flavor.
  • Do not overmix the batter.
  • Add walnuts instead of pecans if preferred.
  • Line the loaf pan with parchment paper.
  • Check the bread after 50 minutes.
  • Let the bread cool before slicing.
  • Add chocolate chips for extra sweetness.
  • Store the bread tightly covered for freshness.
  • Use room temperature eggs for better mixing.
