Ingredients
  

  • 2 pounds beef chuck cut into cubes
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 onion chopped
  • 3 cloves garlic minced
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 3 carrots sliced
  • 3 potatoes peeled and cubed
  • 1 cup celery chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 tablespoons all-purpose flour
  • 2 tablespoons water
  • 1 cup frozen peas
  • 1 bay leaf

Instructions
 

Brown the Beef

  • Heat vegetable oil in a large Dutch oven over medium heat. Add beef cubes in batches. Cook until browned on all sides. Browning adds deep flavor to the stew and improves texture.

Cook the Onion and Garlic

  • Add chopped onion to the pot. Cook for about five minutes until soft. Stir in minced garlic and cook for one more minute until fragrant.

Add the Broth and Seasonings

  • Pour in beef broth and add tomato paste. Stir well to combine. Add salt, pepper, thyme, paprika and bay leaf. These ingredients create a rich and flavorful broth.

Add Vegetables

  • Add carrots, potatoes, and celery to the pot. Stir everything together so the vegetables mix with the broth and beef. The vegetables will slowly cook and soften.

Simmer the Stew

  • Bring the stew to a gentle boil. Reduce heat to low and cover the pot. Let it simmer slowly for about ninety minutes. The beef will become very tender.

Thicken the Stew

  • Mix flour and water in a small bowl until smooth. Pour the mixture into the stew while stirring. Cook for five minutes until the broth thickens nicely.

Add Peas and Finish

  • Stir in frozen peas during the last five minutes of cooking. Remove the bay leaf before serving. Taste the stew and adjust salt or pepper if needed.
