Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts optional

For Frosting:

  • 200 g cream cheese
  • ½ cup butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Preheat the Oven

  • Set your oven to 180°C (350°F). Grease your baking pan with oil or butter. This helps the cake not stick. Prepare everything before mixing the ingredients.

Mix Dry Ingredients

  • Take a large bowl. Add flour, sugar, baking soda, baking powder, cinnamon and salt. Mix well using a whisk. This helps all ingredients spread evenly.

Add Wet Ingredients

  • Now add eggs, oil and vanilla extract. Mix everything until smooth. The batter should look thick but soft. Do not overmix to keep the cake light.

Add Carrots and Nuts

  • Put grated carrots into the batter. Add walnuts if you like crunch. Mix gently using a spatula. This keeps the texture soft and moist.

Bake the Cake

  • Pour the batter into the prepared pan. Bake for 35 to 40 minutes. Check with a toothpick. If it comes out clean, the cake is ready.

Prepare Frosting

  • In a bowl, beat cream cheese and butter until smooth. Add powdered sugar slowly. Mix well until creamy. Add vanilla for extra flavor.

Frost and Serve

  • Let the cake cool completely. Spread frosting on top evenly. Cut into slices and serve. Enjoy your homemade carrot cake.

Notes

  • Use fresh carrots for better taste
  • Do not overmix the batter
  • Let the cake cool before frosting
  • Use room temperature ingredients
  • Add nuts for extra texture
