Equipment

  • 9x13 inch baking pan
  • Mixing Bowls
  • Hand mixer or whisk
  • Spatula
  • Measuring Cups
  • Measuring Spoons
  • Cooling rack

Ingredients

  • 1 box yellow cake mix 15.25 oz
  • 1/2 cup unsalted butter melted
  • 1 large egg
  • 8 oz cream cheese softened
  • 2 large eggs
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Preheat the Oven

  • Preheat your oven to 350°F. Grease a 9x13 inch baking pan with butter or cooking spray. Make sure all sides are covered well so nothing sticks later.

Make the Bottom Layer

  • In a large bowl, mix the cake mix, melted butter, and one egg. Stir until a thick dough forms. It will look sticky but that is normal.

Press the Dough

  • Press the dough evenly into the bottom of your greased pan. Use clean hands or a spatula. Make sure the layer is flat and smooth.

Prepare the Cream Cheese Layer

  • In another bowl, beat the softened cream cheese until smooth. Add two eggs and vanilla extract. Mix well until creamy and free from lumps.

Add Powdered Sugar

  • Slowly add powdered sugar to the cream cheese mixture. Beat on low speed first. Then mix until smooth and thick. The batter will be sweet and silky.

Pour the Top Layer

  • Pour the cream cheese mixture over the cake base. Spread it gently with a spatula. Make sure the top layer covers the entire surface evenly.

Bake the Dessert

  • Place the pan in the preheated oven. Bake for about 40 minutes. The top should be light golden. The center should still look slightly soft.

Cool and Slice

  • Remove the pan from the oven. Let it cool completely on a rack. Once cool, cut into squares. Dust with extra powdered sugar if you like

Notes

  • Always soften the cream cheese first. It mixes better.
  • Do not overbake. The center should stay slightly gooey.
  • Let it cool before cutting. It sets as it cools.
  • Use parchment paper for easy removal.
  • Store in the fridge for cleaner slices.
