Ingredients

  • 2 cups sharp cheddar cheese shredded
  • 2 cups Monterey Jack cheese shredded
  • ½ cup mayonnaise
  • 4 oz jar diced pimentos drained
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper optional
  • Salt and black pepper to taste

Instructions

Mix the Cheese

  • In a large bowl, combine the shredded cheddar and Monterey Jack cheese. Mix them well so they blend evenly.

Add the Mayo

  • Add mayonnaise to the bowl. Stir gently to coat all the cheese with creamy mayo. You can use a hand mixer if you like a smoother texture.

Add Pimentos

  • Add the diced pimentos and mix again. They add color, sweetness, and that classic Southern flavor.

Season It

  • Add garlic powder, onion powder, cayenne pepper, salt, and black pepper. Stir until all ingredients are well mixed.

Chill Before Serving

  • Cover the bowl and refrigerate for at least one hour. This helps the flavors blend and the texture set perfectly.

Notes

  • Use sharp cheddar for bold flavor.
  • Let it chill before serving for the best taste.
  • Add more mayo if you like it creamier.
  • Use smoked paprika for a smoky twist.
  • Grate your own cheese instead of using pre-shredded—it melts better.
