Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 can crushed pineapple with juice, 20 oz
  • 1/2 cup chopped walnuts optional

For Frosting:

  • 1/2 cup butter
  • 1 cup sugar
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut

Instructions

Prepare the Oven and Pan

  • Preheat your oven to 350°F (175°C). Grease your baking pan lightly. This helps prevent sticking and makes it easy to remove the cake after baking.

Mix the Dry Ingredients

  • In a large bowl, add flour, sugar, baking soda and salt. Mix well using a spoon or whisk. This ensures even distribution of all dry ingredients.

Add Wet Ingredients

  • Add eggs and crushed pineapple with juice into the bowl. Mix everything together until smooth. The batter will be slightly thick but easy to spread.

Add Nuts (Optional)

  • If you like crunch add chopped walnuts into the batter. Mix gently to combine. This adds texture and enhances the flavor of the cake.

Bake the Cake

  • Pour the batter into the prepared pan. Spread evenly with a spatula. Bake for 30 to 35 minutes until golden and cooked through. Insert a toothpick to check doneness.

Prepare the Frosting

  • In a saucepan, add butter, sugar and evaporated milk. Cook over medium heat while stirring. Bring to a gentle boil and cook until slightly thick.

Finish and Frost

  • Remove frosting from heat and add vanilla and coconut. Mix well. Pour warm frosting over hot cake. Spread evenly and let it soak in before serving.

Notes

  • Use pineapple with juice for extra moisture.
  • Do not overmix batter to keep cake soft.
  • Pour frosting while cake is still warm.
  • Add pecans instead of walnuts if preferred.
  • Let cake cool slightly before slicing.
