Ingredients

  • 2 cups pineapple chunks drained
  • 1 cup pineapple juice reserved from can
  • 1/2 cup sugar
  • 4 tablespoons all-purpose flour
  • 1 cup shredded cheddar cheese
  • 1 sleeve buttery crackers like Ritz, crushed
  • 1/2 cup melted butter

Instructions

Preheat the Oven

  • Preheat your oven to 350°F (175°C). This helps the casserole cook evenly. Grease your baking dish lightly with butter or oil to prevent sticking.

Prepare the Pineapple Base

  • Take a large mixing bowl. Add pineapple chunks and reserved juice. Mix gently. This creates a sweet and juicy base for the casserole.

Mix Sugar and Flour

  • In the same bowl, add sugar and flour. Stir well until everything combines. The mixture will thicken slightly and coat the pineapple pieces.

Add Cheese

  • Now add shredded cheddar cheese. Mix gently so the cheese spreads evenly. The cheese will melt later and give a creamy texture.

Transfer to Baking Dish

  • Pour the mixture into the greased baking dish. Spread it evenly using a spoon. Make sure the layer is smooth for even baking.

Prepare the Topping

  • In a small bowl, mix crushed crackers with melted butter. Stir until all crumbs are coated. This topping will become crispy and golden.

Add the Topping

  • Sprinkle the cracker mixture over the pineapple layer. Cover the entire surface. Do not press too hard, keep it light.

Bake the Casserole

  • Place the dish in the oven. Bake for 25 to 30 minutes. The top should turn golden brown and the edges will bubble slightly.

Cool and Serve

  • Remove from oven and let it cool for 5 minutes. This helps the casserole set properly. Serve warm for the best taste.

Notes

  • Use fresh pineapple if available for a fresher taste
  • Do not skip draining pineapple to avoid watery casserole
  • Use sharp cheddar cheese for stronger flavor
  • Crush crackers finely for even topping
  • Do not overbake, or the topping may burn
  • Let it rest before serving for better texture
