Ingredients
  

  • 1.5 pounds pork tenderloin
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon onion powder
  • 1/4 cup chicken broth
  • 2 tablespoons butter
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey

Prepare the pork

  • Pat the pork tenderloin dry using paper towels. This helps it sear better. Trim any extra fat. Place it on a plate and keep ready for seasoning.

Season the meat

  • Mix salt, pepper, paprika, thyme and onion powder in a bowl. Rub this mixture all over the pork. Make sure every side is coated well.

Sear the pork

  • Heat olive oil in a skillet over medium-high heat. Add the pork and sear each side. Cook until golden brown. This step locks in juices and adds flavor.

Prepare the sauce

  • In the same skillet, add garlic and cook briefly. Pour chicken broth and stir well. Add butter, Dijon mustard, and honey. Mix until smooth and slightly thick.

Bake the tenderloin

  • Preheat oven to 180°C (350°F). Place seared pork in a baking dish. Pour sauce over it. Bake for 25 to 30 minutes until fully cooked and tender.

Rest and slice

  • Remove pork from oven and let it rest for 10 minutes. This keeps it juicy. Slice into pieces and serve with extra sauce on top.
