Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 ½ cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 ½ cups vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar

For Cream Cheese Frosting:

  • 8 oz cream cheese softened
  • ½ cup butter softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions
  

Preheat the Oven

  • Preheat your oven to 175°C (350°F). Grease your cake pans with butter or oil. Add parchment paper for easy removal. This helps the cake come out clean and smooth.

Mix Dry Ingredients

  • Take a large bowl. Add flour, sugar, baking soda, salt and cocoa powder. Mix well using a whisk. Make sure everything is evenly combined without lumps.

Mix Wet Ingredients

  • In another bowl, add oil, buttermilk, eggs, food coloring, vanilla extract and vinegar. Mix until smooth. The color should look bright red and even.

Combine Wet and Dry

  • Slowly add the wet mixture into the dry mixture. Mix gently with a spatula or mixer. Do not overmix. The batter should be smooth and slightly thick.

Pour into Pans

  • Divide the batter evenly into the prepared pans. Smooth the top using a spatula. This helps the cake bake evenly and look nice.

Bake the Cake

  • Place pans in the oven. Bake for 30 minutes. Check with a toothpick. If it comes out clean, the cake is ready. Let the cakes cool completely.

Make the Frosting

  • In a bowl, beat cream cheese and butter until smooth. Add powdered sugar slowly. Mix well. Add vanilla extract and beat until creamy and fluffy.

Frost the Cake

  • Place one cake layer on a plate. Spread frosting evenly. Add the second layer on top. Cover the whole cake with frosting. Smooth it nicely.

Notes

  • Use room temperature ingredients for better mixing
  • Do not skip vinegar, it helps the texture
  • Use gel food color for deeper red shade
  • Do not overbake, or cake will dry out
  • Chill the cake before cutting for clean slices
