Ingredients
  

  • 4 –6 chicken pieces legs, thighs, or breasts
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup buttermilk
  • 2 large eggs
  • 2 –3 cups vegetable oil for frying
  • Optional: cayenne pepper for extra spice

Prepare the Chicken

  • Wash and pat chicken pieces dry. This removes excess moisture. It helps the coating stick better. Set aside while preparing other ingredients.

Make the Marinade

  • In a bowl, mix buttermilk and eggs. Add a pinch of salt and pepper. Place chicken in the mixture. Let it marinate for 10–15 minutes. This keeps chicken juicy.

Prepare the Flour Coating

  • In a separate bowl, combine flour, salt, black pepper, paprika, garlic powder and onion powder. Mix well. This creates a flavorful coating for the chicken.

Coat the Chicken

  • Remove chicken from buttermilk mixture. Dredge each piece in the seasoned flour. Press lightly so flour sticks well. Ensure all sides are fully coated.

Heat the Oil

  • Pour vegetable oil into a large skillet. Heat over medium-high heat. Test with a small piece of flour mixture; it should sizzle immediately. This ensures proper frying temperature.

Fry the Chicken

  • Carefully place chicken pieces in the hot oil. Cook for 10–12 minutes per side. Turn with tongs. Fry until golden brown and fully cooked inside. Internal temperature should reach 75°C (165°F).

Drain and Serve

  • Remove chicken from oil and place on paper towels or wire rack. This removes extra oil. Serve hot immediately for best taste and crunch.

Notes

  • Do not overcrowd the pan; fry in batches
  • Keep oil at medium heat to avoid burning
  • Use a thermometer to check chicken is fully cooked
  • Let chicken rest 5 minutes before serving
  • Add spices to flour for extra flavor
