Ingredients
  

  • Fresh strawberries – 3 cups sliced
  • Sugar – ½ cup divided
  • All-purpose flour – 2 cups
  • Baking powder – 1 tbsp

  • Unsalted butter – 100g cold, cubed
  • Heavy cream – 1 cup
  • Vanilla extract – 1 tsp
  • Whipped cream – 1½ cups

Prepare the Strawberries

  • Wash and slice fresh strawberries. Add them to a bowl with sugar. Mix well and let them sit. This releases juice and creates a sweet strawberry syrup.

Preheat the Oven

  • Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper. This helps biscuits bake evenly and prevents sticking during baking.

Mix Dry Ingredients

  • In a large bowl, add flour, baking powder and salt. Mix well using a whisk. This ensures all dry ingredients are evenly combined before adding butter.

Add Butter

  • Add cold butter cubes to the flour mixture. Rub with fingers until it looks like crumbs. This step helps create soft and flaky biscuits.

Add Cream and Vanilla

  • Pour heavy cream and vanilla extract into the mixture. Stir gently until dough forms. Do not overmix. The dough should be soft and slightly sticky.
