Ingredients

  • Grouper filets – 4 filets about 1.5 lbs
  • Pecans – 1 cup finely chopped
  • Breadcrumbs – 1/2 cup
  • Parmesan cheese – 1/4 cup grated
  • Butter – 2 tablespoons melted
  • Dijon mustard – 2 tablespoons
  • Mayonnaise – 2 tablespoons
  • Lemon juice – 1 tablespoon
  • Salt – 1/2 teaspoon
  • Garlic powder – 1/2 teaspoon
  • Black pepper – 1/2 teaspoon
  • Cooking spray – As needed

Instructions

Step 1. Preheat the Oven:

  • Set your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.

Step 2. Prepare the Pecan Crust:

  • Use a food processor to finely chop 1 cup of pecans.
  • In a mixing bowl, combine the chopped pecans, 1/2 cup of breadcrumbs, and 1/4 cup of grated Parmesan cheese.
  • Stir thoroughly to ensure the ingredients are evenly blended.

Step 3. Prepare the Grouper Filets:

  • Gently dry the grouper filets with a paper towel.
  • Season the filets with 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of garlic powder.

Step 4. Make the Coating Mixture:

  • In another bowl, combine 2 tablespoons of Dijon mustard, 2 tablespoons of mayonnaise, 1 tablespoon of lemon juice, and 2 tablespoons of melted butter.
  • Blend until the mixture is silky and thoroughly mixed.

Step 5. Coat the Filets:

  • Brush the Dijon mustard mixture evenly over each grouper filet.
  • Press the filets into the pecan mixture, coating the tops evenly.

Step 6. Prepare for Baking:

  • Arrange the coated filets on the lined baking sheet.
  • Lightly coat the tops of the filets with cooking spray. This aids in achieving a golden, crispy texture.

Step 7. Bake the Grouper:

  • Position the baking sheet inside the already heated oven.
  • Bake for 15-20 minutes. The fish should flake easily with a fork, and the crust should be golden brown.

Step 8. Serve:

  • Once baked, remove the filets from the oven.
  • Allow a brief cooling period on the baking sheet.
  • Serve warm with your choice of sides.

Notes

  • Use Fresh Fish: Fresh grouper will give the best flavor and texture.
  • Crush Pecans Evenly: Make sure the pecans are evenly crushed for a consistent crust.
  • Don’t Overcook: Bake the grouper just until it’s flaky and tender.
  • Season Well: Season the fish well before coating to enhance the flavor.
  • Use Parchment Paper: Cover the baking sheet with parchment paper to avoid sticking.
