Ingredients

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 small onion finely chopped
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 2 cloves garlic minced
  • 1 cup shredded provolone cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 cup marinara or tomato sauce
  • Extra cheese slices for topping

Instructions

Preheat the oven

  • Set your oven to 375°F (190°C). Grease a loaf pan lightly with oil or butter.

Cook the vegetables

  • Heat a frying pan. Add onions, green and red peppers, and garlic. Cook until soft and fragrant.

Mix the meat

  • In a large bowl, combine ground beef, ground pork, breadcrumbs, milk, egg and spices. Mix gently.

Add cooked vegetables

  • Fold the cooked onions, peppers, and garlic into the meat mixture. Mix until well combined.

Add cheese

  • Add shredded provolone to the meat mixture. Stir gently to distribute the cheese evenly.

Shape the loaf

  • Transfer the mixture to the greased loaf pan. Press gently to shape it evenly.

Add sauce and top cheese

  • Spread tomato sauce on top. Place extra cheese slices over the sauce for a cheesy topping.

Bake the meatloaf

  • Put the pan in the preheated oven. Bake for 45–50 minutes until fully cooked.

Check doneness

  • Insert a thermometer in the center; it should read 160°F (71°C) for safe cooking.

Rest before slicing

  • Let the meatloaf rest for 5–10 minutes. Slice carefully to keep the layers intact.

Notes

  • Use a mix of beef and pork for juicy meatloaf.
  • Do not overmix the meat; it makes the meatloaf dense.
  • Cook vegetables before adding to meat; it prevents watery meatloaf.
  • Rest the meatloaf before slicing for cleaner cuts.
  • Use provolone for authentic Philly flavor, but cheddar or mozzarella also works.
