Ingredients
  

  • 1 box white cake mix
  • Ingredients needed for cake mix usually eggs, oil, water
  • 1 can 20 oz crushed pineapple, drained
  • 1 cup shredded coconut
  • 1 package 8 oz cream cheese, softened
  • 1 cup butter softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan lightly. This prevents the cake from sticking.

Prepare the Cake Batter

  • Prepare the cake mix according to package instructions. Mix eggs, oil, water and cake mix in a large bowl. Stir until smooth.

Bake the Cake

  • Pour the batter into the prepared pan. Spread evenly with a spatula. Bake in the preheated oven for 25 minutes or until a toothpick comes out clean.

Cool the Cake

  • Remove the cake from the oven. Let it cool completely on a cooling rack. This is important before adding the creamy topping.

Make the Cream Topping

  • In a mixing bowl, beat cream cheese and butter until smooth. Add powdered sugar and vanilla extract. Beat until creamy and fluffy.

Whip the Cream

  • In a separate bowl, whip the heavy cream until soft peaks form. Fold the whipped cream gently into the cream cheese mixture.

Add Pineapple and Coconut

  • Fold in drained crushed pineapple and shredded coconut. Mix until evenly combined. This adds sweetness and tropical flavor.

Frost the Cake

  • Spread the cream mixture evenly over the cooled cake. Smooth with a spatula. Make sure the topping covers the entire surface.

Chill Before Serving

  • Refrigerate the cake for at least 2 hours. This allows the flavors to meld and topping to firm up. Serve cold for best taste.
