Ingredients

  • 1 cup crushed pineapple with juice
  • 4 large eggs
  • ½ cup melted butter
  • 1 cup sugar
  • 5 slices white bread cubed
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease your baking dish lightly with butter.

Mix the Wet Ingredients

  • In a large bowl, whisk together eggs, sugar, melted butter, vanilla extract, and salt until smooth.

Add Pineapple

  • Stir in the crushed pineapple (including juice) until well mixed.

Add Bread Cubes

  • Fold in the cubed bread gently until coated with the pineapple mixture.

Bake the Casserole

  • Pour the mix into the prepared baking dish. Bake for 40–45 minutes or until golden brown and slightly crisp on top.

Cool and Serve

  • Let it cool for 5–10 minutes before serving. Serve warm for the best taste.

Notes

  • Use day-old bread for better texture.
  • Add a sprinkle of cinnamon or nutmeg for warmth.
  • Don’t drain the pineapple juice — it keeps the casserole moist.
  • For a richer taste, use brioche or Hawaiian bread.
  • Top with shredded coconut before baking for a tropical twist.
