Ingredients

  • Butter – 4 tablespoons
  • Heavy cream – 2 cups
  • Parmesan cheese grated – 1 cup
  • Garlic minced – 2 cloves
  • Salt – ½ teaspoon or to taste
  • Black pepper – ¼ teaspoon
  • Nutmeg – ¼ teaspoon optional
  • Fresh parsley – for garnish optional

Instructions

Melt the Butter

  • Place a saucepan over medium heat. Add butter and let it melt slowly. Stir gently until smooth. Do not let it brown, as burned butter changes the sauce taste.

Cook the Garlic

  • Add minced garlic to the melted butter. Stir for about one minute. The garlic should soften and smell nice. Do not let it turn dark or crispy.

Add the Cream

  • Pour heavy cream slowly into the pan. Stir constantly to mix well. Lower the heat slightly. Let the cream warm gently without boiling.

Season the Sauce

  • Add salt, black pepper and nutmeg if using. Stir well so flavors mix evenly. Taste the sauce and adjust seasoning as needed.

Add the Cheese

  • Lower the heat before adding cheese. Add Parmesan slowly while stirring. Let it melt completely. The sauce will start to thicken naturally.

Simmer and Finish

  • Let the sauce simmer for three to five minutes. Stir often so it stays smooth. Turn off heat when the sauce coats the spoon nicely.

Notes

  • Use fresh grated Parmesan for best taste
  • Keep heat low to avoid curdling
  • Stir often for smooth texture
  • Add pasta water if sauce feels thick
  • Serve immediately for best flavor
