Almond croissants are soft, buttery and filled with sweet almond cream. This Pioneer Woman Almond Croissant Recipe is simple and very tasty.

Ingredients
  

  • 6 plain croissants day-old works best
  • 1/2 cup unsalted butter softened
  • 1/2 cup sugar
  • 1 cup almond flour
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 cup milk
  • 1/4 cup sliced almonds
  • Powdered sugar for topping

Instructions
  

Prepare the Almond Filling

  • Take a bowl and add butter and sugar. Mix until creamy and smooth. Add eggs, almond flour, vanilla extract and almond extract. Mix well until thick and soft texture forms.

Slice the Croissants

  • Use a knife to cut each croissant in half horizontally. Do not cut fully. Keep one side attached so you can open them like a sandwich.

Add Milk Soak

  • Lightly brush or spoon milk inside each croissant. This step makes them soft inside. Do not soak too much or they may become soggy.

Fill with Almond Cream

  • Spread a good amount of almond filling inside each croissant. Close them gently. Add more filling on top for extra flavor and texture.

Add Almond Topping

  • Sprinkle sliced almonds over the top filling. Press them lightly so they stick well. This gives a crunchy top after baking.

Arrange on Tray

  • Place croissants on a baking tray lined with parchment paper. Keep space between each one. This helps even baking.

Bake the Croissants

  • Preheat oven to 180°C (350°F). Bake for 15 to 18 minutes until golden brown. The tops should look crisp and slightly toasted.

Cool and Dust Sugar

  • Remove from oven and let them cool for few minutes. Dust powdered sugar on top before serving. This adds sweetness and bakery-style look.

  • Use day-old croissants for best texture
  • Do not overfill or they may leak
  • Bake until golden, not too dark
  • Use real butter for rich flavor
