Ingredients

  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

For Topping:

  • 2 tablespoons melted butter
  • 1/4 cup sugar
  • 1 teaspoon cinnamon

Instructions

Reduce the Apple Cider

  • Pour apple cider into a saucepan. Simmer on low heat until reduced to half. This takes about 10 minutes. Let it cool before using. This step adds strong apple flavor.

Preheat the Oven

  • Preheat your oven to 175°C (350°F). Grease your cake pan well. This prevents sticking and helps the cake come out clean after baking.

Mix Dry Ingredients

  • In a bowl, add flour, baking powder, baking soda, cinnamon, nutmeg and salt. Mix well using a whisk. This ensures even flavor and texture.

Cream Butter and Sugar

  • In another bowl, beat butter, sugar and brown sugar. Mix until light and fluffy. This step helps create a soft cake texture.

Add Eggs and Vanilla

  • Add eggs one at a time. Mix well after each addition. Then add vanilla extract. This gives a smooth and rich batter.

Combine Wet and Dry

  • Add dry ingredients slowly into the wet mixture. Pour in milk and reduced cider. Mix gently until smooth. Do not overmix to keep the cake soft.

Pour and Bake

  • Pour the batter into the prepared pan. Spread evenly with a spatula. Bake for 35–40 minutes until a toothpick comes out clean.

Add Cinnamon Sugar Topping

  • Brush melted butter over the warm cake. Mix sugar and cinnamon, then sprinkle on top. This gives a doughnut-style coating.

Cool and Serve

  • Let the cake cool for 10–15 minutes. Remove from pan and place on a rack. Slice and enjoy warm or at room temperature.

Notes

  • Use fresh apple cider for best flavor.
  • Do not skip reducing the cider.
  • Measure ingredients carefully.
  • Do not overmix the batter.
  • Use a bundt pan for a classic look.
  • Add extra cinnamon for stronger spice flavor.
  • Let the cake cool slightly before slicing.
