Ingredients
  

  • Beef sirloin or flank steak – 1 pound thinly sliced
  • Bell peppers mixed colors – 3 cups, sliced
  • Onion – 1 medium sliced
  • Garlic – 2 cloves minced
  • Soy sauce – ¼ cup
  • Oyster sauce – 2 tablespoons
  • Brown sugar – 1 tablespoon
  • Cornstarch – 1 tablespoon
  • Water – ¼ cup
  • Sesame oil – 1 teaspoon
  • Vegetable oil – 2 tablespoons
  • Black pepper – ½ teaspoon

Instructions
 

Slice the beef

  • Slice beef thin against the grain. This helps the meat stay tender while cooking.

Mix the sauce

  • Combine soy sauce, oyster sauce, brown sugar, cornstarch, water and sesame oil until smooth.

Heat the pan

  • Heat vegetable oil in a skillet over medium-high heat until hot but not smoking.

Cook the beef

  • Add beef in a single layer. Cook quickly until browned. Remove beef and set aside.

Cook the vegetables

  • Add onions and peppers to the same pan. Stir fry until slightly soft but crisp.

Add garlic

  • Add minced garlic. Cook for thirty seconds until fragrant. Do not let it burn.

Return the beef

  • Add cooked beef back to the pan. Stir gently with the vegetables.

Add the sauce

  • Pour sauce into the pan. Stir until thick and glossy. Cook for two minutes.

Finish and serve

  • Remove from heat. Add black pepper. Serve hot with rice or noodles.

Notes

  • Slice beef very thin for quick cooking.
  • Do not overcook peppers. Keep them slightly crisp.
  • Use a hot pan for best stir fry flavor.
  • Stir sauce again before adding.
  • Taste and adjust salt before serving.
