The Pioneer Woman Bierocks Recipe is warm, hearty and very comforting. These soft bread rolls are filled with beef and cabbage.

Ingredients
  

For the Dough:

  • 3 cups all-purpose flour
  • 1 packet 2 ¼ teaspoons active dry yeast
  • 1 cup warm milk
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 tablespoons butter melted
  • 1 large egg

For the Filling:

  • 1 pound ground beef
  • 2 cups finely chopped cabbage
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions
 

Activate the Yeast

  • In a small bowl, combine warm milk and sugar. Sprinkle yeast on top. Let it sit for 5 to 10 minutes until bubbly and foamy.

Make the Dough

  • In a large bowl, mix flour and salt. Add melted butter, egg and yeast mixture. Stir until dough forms. Knead for 8 minutes until smooth and elastic.

Let Dough Rise

  • Place dough in a greased bowl. Cover with clean towel. Let it rise in warm place for 1 hour until doubled in size.

Prepare the Filling

  • Heat olive oil in skillet over medium heat. Add onion and garlic. Cook until soft. Add ground beef. Cook until browned and fully cooked.

Add Cabbage

  • Stir chopped cabbage into cooked beef. Add salt and pepper. Cook for 5 minutes until cabbage softens. Remove from heat and cool slightly.

Shape the Bierocks

  • Punch down risen dough. Divide into 8 equal pieces. Roll each piece into circle. Place 2 tablespoons filling in center of each circle.

Seal the Rolls

  • Fold edges over filling. Pinch seams tightly to seal. Place seam-side down on lined baking sheet. Leave space between each roll.

Second Rise

  • Cover shaped rolls with towel. Let them rise again for 20 minutes. This makes them soft and fluffy after baking.

Bake the Bierocks

  • Preheat oven to 375°F (190°C). Bake for 20 to 25 minutes until golden brown. Remove from oven and cool slightly before serving.

Notes

  • Do not use hot milk for yeast. It can kill yeast.
  • Let filling cool before placing in dough.
  • Seal edges tightly to prevent leaks.
  • Brush tops with melted butter for shine.
  • Do not overfill rolls.
  • Store extra filling for later use.
