Ingredients

  • 2 chicken breasts sliced into strips
  • 2 teaspoons Cajun seasoning
  • 2 tablespoons olive oil
  • 3 cups cooked pasta penne or fettuccine
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 small onion sliced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 cup chicken broth
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Fresh parsley for garnish

Instructions

Cook the Pasta

  • Boil water in a large pot. Add salt and pasta. Cook until tender but firm. Drain and set aside. Do not overcook. Pasta should hold its shape well.

Season the Chicken

  • Place chicken strips in a bowl. Add Cajun seasoning and mix well. Make sure each piece is coated. This step adds bold flavor to the chicken.

Cook the Chicken

  • Heat olive oil in a large skillet over medium heat. Add chicken strips. Cook for 6–8 minutes until golden and cooked through. Remove from pan and set aside.

Sauté the Vegetables

  • In the same pan, add onions and bell peppers. Cook for 4–5 minutes until soft. Add garlic and cook for one minute. Stir gently to avoid burning.

Make the Sauce

  • Pour chicken broth into the pan. Stir to deglaze. Add heavy cream, paprika, and black pepper. Mix well. Let it simmer until the sauce thickens slightly.

Add Cheese

  • Add grated parmesan cheese into the sauce. Stir until melted and smooth. The sauce should look creamy and rich. Taste and adjust salt if needed.

Combine Everything

  • Add cooked pasta and chicken into the sauce. Toss gently to coat everything evenly. Let it cook for 2–3 minutes so flavors blend well together.

Garnish and Serve

  • Turn off heat. Sprinkle fresh parsley on top. Serve warm and enjoy. This pasta tastes best when fresh and hot from the pan.

Notes

  • Use fresh chicken for best flavor
  • Do not overcook pasta
  • Adjust Cajun spice level to your taste
  • Use freshly grated cheese for better melting
  • Add a splash of pasta water if sauce is too thick
