Ingredients
  

  • 1 pound ground beef
  • 1 small onion chopped
  • 2 carrots diced
  • 2 celery stalks chopped
  • 2 medium potatoes peeled and diced
  • 3 cups chicken broth
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon chopped parsley

Instructions
 

Cook the Ground Beef

  • Place a large pot over medium heat. Add ground beef and cook until browned. Break it apart with a spoon. Cook for about 7 minutes until fully done.

Add the Vegetables

  • Add chopped onion, carrots and celery into the pot. Cook for 5 minutes. Stir often until vegetables become soft and fragrant.

Add Potatoes and Broth

  • Add diced potatoes and pour chicken broth into the pot. Stir well. Bring to a boil, then reduce heat. Simmer for 15 minutes until potatoes are tender.

Make the Roux

  • In a small pan, melt butter over medium heat. Add flour and stir constantly for 2 minutes. The mixture should become smooth and slightly golden.

Thicken the Soup

  • Slowly add the butter and flour mixture into the soup. Stir well to avoid lumps. This step makes the soup thick and creamy.

Add Milk and Seasoning

  • Pour milk into the soup and stir gently. Add salt, pepper and paprika. Let it simmer for 5 minutes. The soup will become richer.

Add the Cheese

  • Turn the heat to low. Slowly stir in shredded cheddar cheese. Stir until fully melted and smooth. Do not boil after adding cheese.

Finish and Serve

  • Sprinkle fresh parsley on top. Taste and adjust seasoning if needed. Serve hot and enjoy your comforting cheeseburger-style soup.
