Ingredients
  

  • 4 cups peeled and diced potatoes
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 4 tbsp unsalted butter melted
  • ½ cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder optional
  • ½ cup grated Parmesan cheese for topping

Instructions
 

Preheat Oven

  • Set oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter to prevent sticking.

Cook the Potatoes

  • Place diced potatoes in a large pot. Cover with water and bring to a boil. Cook until tender, about 12–15 minutes.

Drain and Mash Potatoes

  • Drain water from potatoes. Mash them in a large bowl until smooth and creamy using a potato masher or electric mixer.

Mix in Ingredients

  • Add cheddar cheese, sour cream, melted butter, milk, salt, pepper and garlic powder to mashed potatoes. Mix until smooth and evenly combined.

Transfer to Baking Dish

  • Spread the cheesy potato mixture evenly into the greased baking dish. Smooth the top with a spatula.

Add Topping

  • Sprinkle grated Parmesan cheese evenly over the top of the casserole for a golden, crispy finish.

Bake the Casserole

  • Place the dish in the oven and bake for 30–35 minutes or until the top is golden and bubbly.

Serve Warm

  • Remove from the oven and let it cool for 5 minutes. Serve warm for the best flavor and creamy texture.

Notes

  • Use Yukon Gold or russet potatoes for creamy texture.
  • Don’t overmix potatoes to keep them fluffy.
  • Adjust cheese amount for extra cheesy flavor.
  • Cover with foil while baking for softer top.
  • Add chopped green onions for a fresh flavor boost.
