Ingredients
  

  • 250 g spaghetti
  • 2 tablespoons olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 cup bell peppers chopped
  • 1 cup zucchini chopped
  • 1 cup mushrooms sliced
  • 2 cups tomato sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions
  

Cook the Spaghetti

  • Boil water in a large pot. Add salt and spaghetti. Cook until just tender. Do not overcook. Drain using a colander. Set aside while preparing the vegetable sauce.

Prepare the Vegetables

  • Heat olive oil in a pan over medium heat. Add chopped onion and garlic. Cook until soft. Add bell peppers, zucchini, and mushrooms. Cook until vegetables are slightly tender.

Make the Sauce

  • Add tomato sauce to the cooked vegetables. Stir well. Add oregano, salt, and black pepper. Let it simmer for 5–7 minutes. This helps the flavors blend nicely.

Combine Pasta and Sauce

  • Add cooked spaghetti to the vegetable sauce. Mix gently until pasta is well coated. Make sure every strand gets some sauce and vegetables.

Assemble the Casserole

  • Preheat oven to 180°C. Grease a baking dish lightly. Add half of the pasta mixture. Sprinkle some mozzarella cheese. Add remaining pasta and top with more cheese.

Bake Until Golden

  • Place the dish in the oven. Bake for 30–35 minutes. The cheese should melt and turn golden. Remove from oven and let it rest for a few minutes.
