  • 1 medium onion chopped

  • 2 cups egg noodles

Instructions
 

Cook the Vegetables

  • Heat olive oil in a large pot over medium heat. Add chopped onion, carrots and celery. Cook for about 5 to 7 minutes. Stir often until vegetables become soft and slightly golden.

Add Garlic

  • Add minced garlic to the pot. Cook for one minute. Stir constantly so the garlic does not burn. This step adds a rich and deep flavor to the soup base.

Pour the Broth

  • Slowly pour chicken broth into the pot. Stir well to combine everything. Increase the heat and bring the soup to a gentle boil. The broth should smell warm and comforting.

Add Seasonings

  • Add salt, black pepper, and dried thyme. Stir well. Reduce the heat to low. Let the soup simmer for 15 minutes. This helps the flavors mix together nicely.

Add the Chicken

  • Add the shredded cooked chicken to the pot. Stir gently. Let it cook for about 5 minutes. The chicken will soak up the broth flavor and become tender.

Add the Noodles
