Ingredients
  

  • 4 thin chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 tablespoons olive oil
  • 4 tablespoons butter
  • 1 cup chicken broth
  • 1/3 cup fresh lemon juice
  • 3 tablespoons capers
  • Fresh parsley for garnish
  • Lemon slices for garnish

Instructions
 

Season the chicken

  • Sprinkle salt and pepper on both sides of each chicken breast.

Coat with flour

  • Place flour in a bowl. Dredge each chicken piece lightly. Shake off extra flour.

Heat the pan

  • Place a pan on medium heat. Add olive oil and two tablespoons of butter.

Cook the chicken

  • Add chicken to the hot pan. Cook both sides until golden and soft.

Remove the chicken

  • Take the chicken out. Place it on a plate. Keep the pan on heat.

Make the sauce

  • Add chicken broth, lemon juice, and capers to the hot pan.

Stir the sauce

  • Mix well. Let the sauce simmer. Let it reduce a little for deeper taste.

Add butter

  • Add two tablespoons of butter to the sauce. Stir until smooth and shiny.

Return chicken

  • Place the chicken back into the sauce. Coat each piece very well.

Simmer a bit

  • Let the chicken simmer for a short time. The flavors will blend nicely.

Garnish and serve

  • Add fresh parsley and lemon slices. Serve warm with your favorite side.
