Ingredients
  

  • 2 cups cooked chicken shredded
  • 8 oz spaghetti cooked and drained
  • 1 can 10.5 oz cream of chicken soup
  • 1 can 10.5 oz cream of mushroom soup
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 cup cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • 1 small onion chopped
  • 1 green bell pepper chopped
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp butter
  • 1 cup breadcrumbs optional

Instructions
 

Cook the spaghetti

  • Boil spaghetti in salted water. Cook until just soft. Drain and set aside.

Sauté vegetables

  • In a skillet, melt butter. Add onion, pepper and garlic. Cook until soft.

Make the sauce

  • Add soups, sour cream and broth to the skillet. Stir well until smooth.

Add spices and chicken

  • Add salt, pepper and paprika. Mix in shredded chicken.

Mix pasta and sauce

  • Add cooked spaghetti to the sauce. Stir until fully coated.

Add cheese

  • Mix in cheddar and Monterey Jack. Stir until melted.

Bake the casserole

  • Pour mixture into a baking dish. Sprinkle breadcrumbs on top.

Bake until bubbly

  • Bake at 350°F for 20 minutes. Bake until cheese is bubbly.

Notes

  • Use rotisserie chicken for quick prep.
  • Cook spaghetti al dente for best texture.
  • Add more cheese for a richer taste.
  • Use crushed crackers instead of breadcrumbs.
  • Let it rest 5 minutes before serving.
  • You can add a little hot sauce for heat.
