Ingredients
  

  • 1 pound ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 cup elbow macaroni
  • 1 can 14 oz diced tomatoes
  • 1 cup tomato sauce
  • 1 cup beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 tablespoon tomato paste
  • 2 tablespoons chopped fresh parsley optional

Instructions
 

Cook the Macaroni

  • Bring a pot of salted water to a boil. Add elbow macaroni and cook according to package instructions. Stir occasionally so pasta does not stick. Drain and set aside.

Heat the Skillet

  • Place a large skillet or Dutch oven on medium heat. Add olive oil and allow it to warm for one minute before adding other ingredients.

Cook the Ground Beef

  • Add ground beef to the skillet. Break it apart using a wooden spoon. Cook until the beef turns brown and no pink pieces remain.

Add Onion and Garlic

  • Add chopped onion to the skillet. Cook for about three minutes until soft. Then add minced garlic and cook for another minute while stirring.

Add Tomato Paste and Spices

  • Stir in tomato paste, chili powder, cumin, paprika, salt and black pepper. Mix well so the spices coat the beef and onions evenly.

Add Tomatoes and Broth

  • Pour in diced tomatoes, tomato sauce and beef broth. Stir everything together. Let the mixture simmer gently for about 10 minutes to build flavor.

Add the Cooked Macaroni

  • Add the drained macaroni to the chili mixture. Stir well so the pasta mixes with the sauce. Let it cook together for five minutes.

Add the Cheese

  • Sprinkle shredded cheddar cheese over the chili mac. Stir until the cheese melts and becomes creamy throughout the dish.

Simmer and Thicken

  • Allow the chili mac to cook for another five minutes. The sauce will become thicker and the flavors will blend together nicely.

Garnish and Serve

  • Turn off the heat. Sprinkle chopped parsley on top if desired. Serve the chili mac warm and enjoy this comforting homemade meal.

Notes

  • Use freshly grated cheese for better melting.
  • Do not overcook the pasta before adding it to the sauce.
  • Add a little hot sauce if you like extra spice.
  • Let the chili simmer longer for deeper flavor.
  • Ground turkey can replace beef for a lighter option.
