Ingredients

  • Ground beef – 1½ pounds
  • Onion chopped – 1 medium
  • Garlic minced – 3 cloves
  • Green bell pepper chopped – 1
  • Red bell pepper chopped – 1
  • Canned diced tomatoes – 2 cans 14.5 oz each
  • Tomato sauce – 1 can 8 oz
  • Kidney beans drained – 1 can (15 oz)
  • Black beans drained – 1 can (15 oz)
  • Chili powder – 2 tablespoons
  • Cumin – 1 tablespoon
  • Paprika – 1 teaspoon
  • Oregano – 1 teaspoon
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Olive oil – 2 tablespoons
  • Optional: shredded cheese sour cream, chopped green onions for topping

Instructions

Heat the Oil

  • In a large pot, heat olive oil over medium heat. Add onions and garlic. Cook for three minutes until soft and fragrant.

Brown the Beef

  • Add ground beef to the pot. Cook for five to seven minutes. Break meat into small pieces. Cook until fully browned. Drain excess fat if needed.

Add the Peppers

  • Add chopped green and red bell peppers. Stir and cook for three minutes. They should soften slightly but still keep some crunch.

Add Tomatoes and Sauce

  • Pour diced tomatoes and tomato sauce into the pot. Stir gently. Mix everything together evenly.

Add Beans

  • Add drained kidney beans and black beans. Stir them into the mixture. This adds texture and makes the chili hearty.

Add Spices

  • Sprinkle in chili powder, cumin, paprika, oregano, salt and black pepper. Stir well to combine. Adjust seasoning to taste.

Simmer the Chili

  • Lower heat to medium-low. Cover the pot. Let chili simmer for 25–30 minutes. Stir occasionally to prevent sticking.

Taste and Adjust

  • Taste the chili. Add more salt, pepper or chili powder if needed. Stir well. Ensure flavors are balanced before serving.

Serve Hot

  • Ladle chili into bowls. Top with shredded cheese, sour cream or green onions if desired. Serve warm with your favorite side.

Notes

  • Use fresh vegetables for best flavor.
  • Brown beef well for richer taste.
  • Simmer slowly to deepen the flavors.
  • Add a pinch of cayenne for extra heat.
  • Stir occasionally to prevent burning at the bottom.
