Ingredients
  

  • 1 unbaked 9-inch pie crust
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 cup sweetened shredded coconut
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1 pinch salt
  • ¼ teaspoon ground nutmeg optional

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Place the oven rack in the middle position. This temperature helps the custard bake slowly and evenly. Lightly grease your pie dish if needed.

Prepare the Pie Crust

  • Place the unbaked pie crust into the pie dish. Press it gently into the sides. Trim any extra dough hanging over the edges. Set the crust aside while you prepare the filling.

Mix the Eggs and Sugar

  • Crack the eggs into a large mixing bowl. Add the sugar. Whisk the mixture until smooth and slightly pale. The sugar should begin dissolving into the eggs.

Add Milk and Cream

  • Pour the milk and heavy cream into the egg mixture. Whisk slowly until everything combines well. This step creates the smooth custard base for the pie.

Add Flavor Ingredients

  • Add the melted butter, vanilla extract, flour and salt. Whisk again until the mixture becomes smooth. Make sure the flour blends well with no lumps remaining.

Stir in the Coconut

  • Add the shredded coconut to the bowl. Mix gently using a spoon or spatula. The coconut will float in the custard and create a nice texture.

Pour the Filling Into the Crust

  • Carefully pour the coconut custard mixture into the prepared pie crust. Sprinkle a little nutmeg on top if you like extra flavor.

Bake the Pie

  • Place the pie dish in the oven. Bake for about 45 minutes. The center should look set but slightly soft. The top will turn lightly golden.

Cool the Pie
