Instructions
 

Preheat the Oven

  • Preheat your oven to 180°C (350°F). Grease a cast iron skillet or baking dish with butter. This ensures the cornbread does not stick.

Mix Dry Ingredients

  • In a large bowl, add cornmeal, flour, sugar, baking powder and salt. Whisk together until evenly combined. This creates a light, airy base for the cornbread.

Mix Wet Ingredients

  • In another bowl, combine creamed corn, milk, eggs, melted butter and vanilla extract. Whisk until smooth. Make sure the eggs are fully incorporated for even texture.

Combine Wet and Dry Ingredients

  • Slowly pour wet mixture into the dry ingredients. Mix gently using a spatula. Do not overmix to keep the cornbread soft and fluffy.

Pour Batter into Skillet

  • Pour the batter into the greased skillet or baking dish. Spread evenly with a spatula. Tap lightly to remove air bubbles for a smooth top.

Bake the Cornbread

  • Place the skillet in the oven. Bake for 30–35 minutes. Insert a toothpick in the center. If it comes out clean, the cornbread is done.

Cool Before Slicing

  • Remove from the oven. Let the cornbread cool in the skillet for 10 minutes. Transfer to a cooling rack. Slice only when slightly cooled to avoid crumbling.
