Ingredients
  

  • 1 can 15 oz black beans, rinsed and drained
  • 1 can 15 oz black-eyed peas, rinsed and drained
  • 1 cup corn kernels fresh, canned, or thawed frozen
  • 1 red bell pepper finely chopped
  • 1 green bell pepper finely chopped
  • 1 small red onion finely chopped
  • 2 medium tomatoes diced
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: diced jalapeño for heat

Instructions
 

Prepare the Vegetables

  • Wash and chop all vegetables. Dice the tomatoes, bell peppers and onion. Chop the cilantro. Place them in a large mixing bowl.

Rinse and Drain Beans

  • Open the cans of black beans and black-eyed peas. Rinse under cold water. Drain completely. Add beans to the bowl with vegetables.

Add Corn

  • Add corn kernels to the bowl. Use fresh, canned or thawed frozen corn. Stir gently to mix all vegetables and beans together.

Make the Dressing

  • In a small bowl, whisk together olive oil, red wine vinegar, lime juice, sugar, salt and black pepper. Stir until smooth.

Combine Dressing and Salad

  • Pour the dressing over the bean and vegetable mixture. Stir gently to coat everything evenly. Make sure the dressing touches every piece.

Add Cilantro and Jalapeño

  • Add chopped cilantro and optional jalapeño. Stir lightly to distribute evenly without bruising vegetables. This adds freshness and a little heat.

Chill the Cowboy Caviar

  • Cover the bowl with plastic wrap. Chill in the refrigerator for at least 30 minutes. This allows the flavors to blend and develop fully.

Serve the Dish
