Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup orange juice fresh or store-bought
  • 1 tablespoon orange zest
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 ½ cups fresh or frozen cranberries chopped
  • ½ cup chopped walnuts or pecans

Instructions
 

Preheat the Oven

  • Preheat your oven to 175°C (350°F). Grease a loaf pan with butter or oil. You can also line it with parchment paper for easy removal later.

Mix Dry Ingredients

  • In a large bowl, add flour, sugar, baking powder, baking soda and salt. Whisk everything well so the mixture is even and smooth.

Mix Wet Ingredients

  • In another bowl, combine orange juice, orange zest, egg and melted butter. Whisk until the mixture becomes smooth and slightly creamy.

Combine Wet and Dry

  • Slowly pour the wet mixture into the dry ingredients. Mix gently using a spatula. Do not overmix. The batter should look slightly thick.

Add Cranberries and Nuts

  • Fold in the chopped cranberries and nuts carefully. Make sure they are spread evenly throughout the batter for balanced flavor.

Pour into Pan

  • Pour the batter into the prepared loaf pan. Spread the top evenly with a spatula. Tap the pan lightly to remove air bubbles.

Bake the Bread

  • Place the pan in the oven. Bake for about 50 to 55 minutes. Insert a toothpick in the center. If it comes out clean, it is ready.

Cool Before Serving

  • Remove the bread from the oven. Let it cool in the pan for 10 minutes. Then transfer to a rack. Cool completely before slicing.

Notes

  • Use fresh cranberries for best flavor. Frozen ones also work well.
  • Do not overmix the batter. It can make the bread dense.
  • Add a little sugar on top before baking for a crunchy crust.
  • Use orange zest for extra fresh taste.
  • Let the bread cool fully before cutting to avoid crumbling.
