Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup unsalted butter melted
  • ¾ cup orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or cooking spray. This prevents the bread from sticking while baking.

Mix Dry Ingredients

  • In a large mixing bowl, combine flour, baking powder, baking soda and salt. Stir well to evenly distribute the ingredients for a consistent texture.

Mix Wet Ingredients

  • In another bowl, whisk together sugar, eggs, melted butter, orange juice, orange zest and vanilla extract. Mix until smooth and well combined.

Combine Wet and Dry Ingredients

  • Gradually pour the wet mixture into the dry ingredients. Stir gently with a spatula until just combined. Do not overmix to keep the bread tender.

Add Cranberries

  • Fold in fresh cranberries carefully. If using nuts, add chopped walnuts or pecans. Stir gently so cranberries and nuts are evenly distributed in the batter.

Pour Batter into Pan

  • Pour the batter into the prepared loaf pan. Spread it evenly with a spatula to make a smooth top for even baking.

Bake the Bread

  • Place the pan in the preheated oven. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.

Cool the Bread

  • Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a cooling rack to cool completely.

Slice and Serve

  • Once the bread has cooled, slice it into 8 even pieces. Serve as breakfast, a snack, or a sweet treat with coffee or tea.
