Ingredients

  • 1 ½ cups chopped pitted dates
  • 1 teaspoon baking soda
  • ¾ cup boiling water
  • ½ cup unsalted butter softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ cup chopped walnuts or pecans

Instructions

Prepare the Dates

  • Place chopped dates in a bowl. Add baking soda over them. Pour boiling water on top. Stir gently and let sit for 10 minutes until soft and slightly thick.

Cream Butter and Sugar

  • In a large bowl, beat softened butter and brown sugar together. Mix until light and creamy. This step helps create a soft and fluffy bread texture.

Add Eggs and Vanilla

  • Add eggs one at a time. Mix well after each addition. Stir in vanilla extract. The mixture should look smooth and slightly creamy.

Mix Dry Ingredients

  • In another bowl, combine flour, salt and baking powder. Stir well to mix evenly. This ensures the bread rises properly while baking.

Combine Wet and Dry

  • Slowly add the dry ingredients into the butter mixture. Mix gently. Do not overmix. The batter should be thick but smooth.

Add Date Mixture and Nuts

  • Pour the softened date mixture into the batter. Add chopped nuts. Fold everything gently using a spoon until well combined.

Prepare the Pan

  • Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper. Pour the batter into the pan. Spread evenly using a spatula.

Bake the Bread

  • Place the pan in the oven. Bake for 50 to 55 minutes. Insert a toothpick in the center. If it comes out clean, the bread is ready.

Cool Before Serving

  • Remove from oven and let cool for 10 minutes. Transfer to a wire rack. Allow to cool completely before slicing for clean cuts.

Notes

  • Chop dates into small pieces for better texture.
  • Do not skip soaking the dates in hot water.
  • Avoid overmixing to keep the bread soft.
  • Toast nuts lightly for extra flavor.
  • Let bread cool fully before slicing.
  • Store in airtight container to keep moisture.
