Ingredients
  

  • 1 pound ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 can 10 oz red enchilada sauce
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • 8 small flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons chopped fresh cilantro optional

Instructions
 

Preheat the Oven

  • Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish. This prevents sticking and makes serving easier later.

Cook the Beef

  • Heat a skillet over medium heat. Add ground beef and chopped onion. Cook until beef is browned. Stir often and break the meat into small pieces.

Add Garlic and Spices

  • Add minced garlic, chili powder, cumin and salt. Stir well. Cook for 1–2 minutes. This step builds strong flavor in the filling.

Add Tomatoes and Sauce

  • Pour half of the enchilada sauce into the beef mixture. Add diced tomatoes with green chilies. Stir and simmer for 5 minutes until slightly thickened.

Fill the Tortillas

  • Place a spoonful of beef mixture in the center of each tortilla. Add a little shredded cheese. Roll tightly and place seam-side down in the baking dish.

Add Sauce and Cheese

  • Pour remaining enchilada sauce evenly over the rolled tortillas. Spread gently with a spoon. Sprinkle remaining cheddar and Monterey Jack cheese on top.

Bake the Enchiladas

  • Cover the dish loosely with foil. Bake at 375°F (190°C) for 20 minutes. Remove foil and bake 5–10 minutes more until cheese is melted and bubbly.

Garnish and Serve

  • Remove from oven carefully. Let it rest for 5 minutes. Sprinkle chopped cilantro on top if desired. Serve warm and enjoy.

  • Use corn tortillas for a more traditional flavor.
  • Warm tortillas before rolling to prevent cracking.
  • Add black beans for extra protein.
  • Adjust spice level by adding jalapeños.
