Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups chicken broth
  • 1 cup whole milk
  • 1 cup cooked chicken shredded
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder optional
  • ¼ teaspoon onion powder optional

Instructions

Melt Butter

  • Place a medium saucepan on the stove over medium heat. Add butter. Let it melt completely. This will be the base for the creamy soup.

Make a Roux

  • Add flour to the melted butter. Whisk continuously for 1–2 minutes. This creates a smooth roux, which thickens the soup without lumps.

Add Chicken Broth

  • Slowly pour chicken broth into the roux. Whisk constantly to prevent lumps. Bring the mixture to a gentle simmer for 3–4 minutes.

Add Milk

  • Pour in the milk slowly. Continue whisking. The soup will become creamy and smooth. Simmer for 5 minutes until slightly thickened.

Season the Soup

  • Add salt, black pepper, garlic powder and onion powder. Stir well. Taste and adjust seasoning as needed. This enhances the natural chicken flavor.

Add Cooked Chicken

  • Add shredded cooked chicken into the saucepan. Stir to combine. Simmer for another 5 minutes so the flavors mix well.

Check Consistency

  • If the soup is too thick, add a little more milk or chicken broth. Stir well to achieve the desired creamy texture.

Serve or Use

  • The soup is ready to serve immediately or use in casseroles. It can also be cooled and stored for later meals.

Notes

  • Use freshly cooked chicken for the best flavor.
  • Whisk constantly when adding milk to prevent lumps.
  • Adjust seasoning to taste for a richer flavor.
  • Use whole milk for creamier soup, or substitute with ½ and ½.
  • This soup works perfectly as a base for casseroles.
  • Store leftover soup in an airtight container in the fridge.
