Ingredients
  

  • Canned hominy drained – 4 cups
  • Butter melted – 4 tablespoons
  • Sour cream – 1 cup
  • Shredded cheddar cheese – 1 ½ cups
  • Onion finely chopped – ½ cup
  • Garlic powder – 1 teaspoon
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Green chilies diced – ½ cup

Instructions
 

Prepare the Oven

  • Preheat your oven to 375°F. Lightly grease a baking dish so the casserole does not stick.

Drain the Hominy

  • Drain the canned hominy well. Remove extra liquid so the casserole stays thick and creamy.

Mix the Base

  • Add hominy, melted butter, sour cream, onion and green chilies to a large bowl. Mix gently.

Add Seasonings

  • Add garlic powder, salt and black pepper. Stir well so the flavors spread evenly.

Add Cheese

  • Fold in most of the shredded cheese. Save a small amount for topping later.

Transfer to Dish

  • Pour the mixture into the prepared baking dish. Spread it evenly with a spoon.

Add Cheese Topping

  • Sprinkle the remaining cheese over the top for a golden and bubbly finish.

Bake the Casserole

  • Bake uncovered for thirty-five minutes until hot, bubbly and lightly golden on top.
