Ingredients
  

  • 1 cup corn kernels fresh or frozen
  • 1 cup canned creamed corn
  • 1 cup shredded cheddar cheese
  • 2 jalapeños finely chopped
  • 1/2 cup sour cream
  • 1/2 cup melted butter
  • 2 eggs
  • 1 box corn muffin mix about 240g
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
  

Preheat the Oven

  • Preheat your oven to 180°C (350°F). Grease your baking dish lightly with butter or oil. This helps prevent sticking and makes serving easier after baking.

Prepare the Jalapeños

  • Wash the jalapeños well. Remove seeds if you want less heat. Chop them into small pieces. Keep them aside for later use.

Mix Wet Ingredients

  • In a large bowl, add eggs, sour cream and melted butter. Whisk everything until smooth. Make sure the mixture is well combined and creamy.

Add Corn and Jalapeños

  • Now add corn kernels, creamed corn and chopped jalapeños. Mix gently so everything spreads evenly in the mixture.

Add Dry Ingredients

  • Add corn muffin mix, salt and black pepper. Stir slowly until everything blends well. Do not overmix or the texture may become dense.

Add Cheese

  • Add shredded cheddar cheese into the mixture. Mix lightly so cheese spreads evenly. This will give a rich and cheesy flavor.

Pour into Baking Dish

  • Pour the batter into your prepared baking dish. Spread it evenly using a spatula. Make sure the surface is smooth.

Bake the Casserole

  • Place the dish in the oven. Bake for about 40 minutes. The top should turn golden and firm in the center.

Cool and Serve

  • Remove from oven and let it cool for 5–10 minutes. Cut into squares and serve warm. Enjoy your homemade dish.
