Ingredients
  

  • Cooked chicken shredded – 3 cups
  • Corn tortillas – 8 to 10 pieces
  • Cream of chicken soup – 1 can
  • Cream of mushroom soup – 1 can
  • Diced tomatoes with green chilies – 1 can
  • Onion chopped – 1 medium
  • Bell pepper chopped – 1 medium
  • Garlic minced – 2 cloves
  • Chicken broth – 1 cup
  • Cheddar cheese shredded – 2 cups
  • Chili powder – 1 teaspoon
  • Cumin – 1 teaspoon
  • Salt – to taste
  • Black pepper – to taste
  • Oil – 2 tablespoons

Prepare the Oven

  • Preheat your oven to 180°C (350°F). Grease your baking dish lightly with oil. This helps prevent sticking and makes serving easier later.

Cook the Vegetables

  • Heat oil in a skillet over medium heat. Add chopped onion, bell pepper and garlic. Cook for 5 minutes until soft and fragrant. Stir often to avoid burning.

Make the Sauce

  • Add cream of chicken soup, cream of mushroom soup, diced tomatoes and chicken broth. Mix well until smooth. Add chili powder, cumin, salt and pepper. Let it simmer for 5 minutes.

Add Chicken

  • Put shredded chicken into the sauce. Stir well so the chicken absorbs all the flavors. Cook for another 3 minutes on low heat.

Layer the Casserole

  • Place a layer of tortillas at the bottom of the baking dish. Add a layer of chicken mixture. Sprinkle some cheese on top. Repeat layers until everything is used.

Add Final Cheese Layer

  • Top the casserole with the remaining cheese. Spread it evenly for a golden, cheesy crust.

Bake the Casserole

  • Bake in the preheated oven for 30–35 minutes. The cheese should melt and turn slightly golden. Let it rest for 10 minutes before serving.
