Ingredients

  • 2 cups strawberries sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 pie crusts top and bottom
  • 1 tablespoon butter cut into small pieces
  • 1 egg for egg wash

Instructions

Prepare the Oven

  • Preheat your oven to 190°C (375°F). Place a baking sheet inside while heating. This helps the bottom crust cook evenly and become crispy.

Make the Berry Filling

  • In a large bowl, combine strawberries, blueberries, raspberries and blackberries. Add sugar, cornstarch, lemon juice, vanilla and salt. Mix gently until berries are well coated.

Prepare the Pie Crust

  • Roll out one pie crust and place it into the pie dish. Press gently into the edges. Trim any extra dough from the sides for a neat finish.

Fill the Pie

  • Pour the berry mixture into the crust. Spread it evenly. Add small butter pieces on top of the filling. This adds richness and flavor while baking.

Add the Top Crust

  • Place the second crust over the filling. Seal the edges by pressing them together. Cut small slits on top to allow steam to escape during baking.

Brush with Egg Wash

  • Beat the egg and brush it over the top crust. This gives the pie a golden and shiny finish. It also helps the crust crisp nicely.

Bake the Pie

  • Place the pie on the preheated baking sheet. Bake for 40–45 minutes. The crust should turn golden brown. The filling will bubble through the slits.

Cool Before Serving

  • Remove the pie from the oven and let it cool for at least one hour. This helps the filling set properly and makes slicing easier.

Notes

  • Use a mix of fresh and frozen berries if needed
  • Do not skip cooling time
  • Use cold dough for a flaky crust
  • Add more sugar if berries are too tart
  • Place foil on edges if crust browns too fast
  • Always cut slits in top crust
  • Let filling thicken before serving
