Ingredients
  

  • Red onions thinly sliced – 2 large
  • White vinegar – 1 cup
  • Water – 1 cup
  • Sugar – 2 tablespoons
  • Salt – 1 tablespoon
  • Black peppercorns – ½ teaspoon
  • Garlic cloves – 2 lightly crushed
  • Bay leaf – 1

Instructions
 

Slice the Onions

  • Peel the red onions. Slice them thinly and evenly. Thin slices pickle faster and taste better in every bite.

Prepare the Brine

  • Add vinegar, water, sugar and salt to a saucepan. Heat on medium. Stir until sugar and salt fully dissolve.

Add Spices

  • Add peppercorns, garlic and bay leaf to the brine. Let the mixture simmer gently for two minutes.

Add the Onions

  • Place sliced onions into a clean glass jar. Pour the hot brine over onions. Make sure all onions are covered.

Cool the Mixture

  • Let the jar sit uncovered for fifteen minutes. This helps onions soften slightly and absorb the brine flavor.

Seal and Chill

  • Close the jar tightly. Place it in the fridge. The onions are ready after one hour.

Notes

  • Use red onions for best color and taste.
  • Slice onions very thin for quick pickling.
  • Use glass jars only.
  • Let onions chill before serving.
  • Adjust sugar for sweeter taste.
