Ingredients
  

  • 1 can 20 oz crushed pineapple (drained)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup melted butter
  • 1/4 cup granulated sugar
  • 1 cup crushed cornflakes
  • 2 tablespoons brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract optional

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish lightly with butter or non-stick spray.

Mix Pineapple and Cream

  • In a medium bowl, combine drained crushed pineapple, sour cream, melted butter, sugar and vanilla. Stir gently until everything is well mixed.

Add Cheese

  • Stir in shredded cheddar cheese. Mix until cheese is evenly combined with pineapple mixture. The mixture will be creamy and slightly thick.

Transfer to Baking Dish

  • Pour the pineapple mixture into the prepared baking dish. Spread evenly using a spatula. Make sure mixture reaches all corners.

Prepare Topping

  • In a small bowl, mix crushed cornflakes, brown sugar and salt. Stir well to coat the cornflakes evenly with sugar and salt.

Add Topping

  • Sprinkle the cornflake mixture evenly over the pineapple mixture. Press lightly with a spatula so it sticks. The topping will be crunchy after baking.

Bake the Casserole

  • Place the dish in the oven. Bake for 20–25 minutes until the topping is golden brown and crispy. Check occasionally to avoid burning.

Cool and Serve

  • Remove casserole from oven. Let it cool for 5–10 minutes before serving. Serve warm as a side or dessert. Enjoy the sweet and crunchy flavors.
