Ingredients
  

  • 3 cups cooked chicken shredded
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup sour cream
  • 1 teaspoon poppy seeds
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups cooked white rice
  • 1 cup shredded cheddar cheese
  • 1 cup crushed buttery crackers like Ritz
  • 3 tablespoons melted butter

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish lightly with butter or nonstick spray.

Prepare the Chicken Mixture

  • In a large mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, poppy seeds, garlic powder, onion powder, salt and pepper. Mix until creamy and smooth.

Add the Rice

  • Add the cooked white rice to the chicken mixture. Stir gently until the rice is evenly coated with the creamy sauce. This gives the casserole a hearty texture.

Transfer to Baking Dish

  • Pour the chicken and rice mixture into the prepared baking dish. Spread evenly with a spoon or spatula. Smooth the top to prepare for the crunchy topping.

Prepare the Topping

  • In a medium bowl, mix crushed buttery crackers with melted butter. Stir until the crumbs are coated with butter. This will make a golden, crispy topping.
