  • 4 bone-in pork chops about 1-inch thick
  • 2 tablespoons olive oil
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 2 cups sauerkraut drained
  • ½ cup apple cider or apple juice
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 tablespoon brown sugar optional

Prepare the Pork Chops

  • Pat the pork chops dry with paper towels. Season both sides with salt, pepper and paprika. This ensures the meat cooks evenly and stays juicy.

Heat the Pan

  • Add olive oil to a large skillet over medium-high heat. Heat until shimmering. This prevents the pork chops from sticking and gives a nice brown crust.

Sear the Pork Chops

  • Place the pork chops in the skillet. Cook for 3-4 minutes per side until golden brown. Do not overcrowd the pan so the meat browns properly.

Remove Pork Chops

  • Take the pork chops out of the pan and set aside on a plate. Keep warm while preparing the sauerkraut mixture.

Cook the Onions and Garlic

  • Add sliced onions and minced garlic to the skillet. Sauté for 3-4 minutes until soft and fragrant. Stir occasionally to avoid burning.

Add Sauerkraut and Liquid

  • Stir in the drained sauerkraut. Pour apple cider or apple juice over it. Mix gently to combine all flavors evenly in the pan.

Season the Mixture

  • Add brown sugar and caraway seeds if using. Stir to mix. These ingredients balance the tangy sauerkraut with a subtle sweetness.

Return Pork Chops to Pan

  • Place the seared pork chops on top of the sauerkraut mixture. Spoon some sauerkraut over the chops. Cover the skillet with a lid.

Simmer Until Done

  • Reduce heat to medium-low. Simmer for 15-20 minutes until the pork chops are fully cooked. The internal temperature should reach 145°F for safe eating.

Garnish and Serve

  • Remove from heat. Sprinkle fresh parsley over the dish for color. Serve hot with the sauerkraut and pan juices.
